2000 Billecart-Salmon - Brut Cuvee Nicolas Francois Billecart

The 2000 Brut Cuvee Nicolas Francois Billecart is a big, exuberant wine that explodes from the glass with layers of fruit. French oak has given the wine an additional measure of volume and richness, but without dominating the wine’s overall balance. Pretty notes of spiciness and minerality add finesse on the close. The Cuvee Nicolas Francois Billecart is 60% Pinot Noir (Mareuil-sur-Ay, Ay, Ambonnay, Verzenay, Mailly) and 40% Chardonnay (Cote des Blancs). In 2000 the wine was aged in barrel (20%) and saw batonnage, although it did not undergo malolactic fermentation.

Bright, focused acidity drives lightly smoked flavors of candied currant and blackberry and patisserie apple, with hints of ground espresso, cumin and crystallized honey. A mineral note threads through the refined texture and lingers on the rich finish. Drink now through 2025. 300 cases imported.
